Will I look like Grampa when I get old?
Grampa's ready to start baking his crusty bread.
The dough has been known to burst the bag.
I'd include the recipe, but no one else would go to that much work.
Gramma's recipe for Nolan's Smoothie...
Carrot, celery, red cabbage, cranberry, spinach and 1/2 banana.
When Nolan saw the dark green color on the spoon, he quickly turned his head away.
When Grampa said, "Try it. It's good," he suspiciously tried it.
One taste and he was hooked.
He doesn't listen to the rest of us that well.
Gramma made us taco salad for lunch. You'll love it.
And they did.
Quinoa Taco Salad
You can have the quinoa taco salad on its own, or on top of a bed of greens.
1 cup quinoa
1 Tbsp. olive oil (suitable for frying)
1 red onion chopped
3 clove garlic, minced
1 1/2 tsp. cumin
1/2 tsp. oregano
1-2 tsp. chili powder
dash cayenne pepper
Half each red and yellow peppers, chopped
1 15-ounce can black beans, drained
3/4 cup diced tomatoes
juice of 1 lime
salt and pepper, to taste

6-8 ounces baby spinach
1 bunch cilantro
1/2 cup cheddar or feta cheese
1 avocado, diced

Cook the quinoa according to pkg. directions.
Heat pan and add olive oil and onion and sauté for 3-5 minutes.
Add garlic, cumin, oregano, chili powder, cayenne and peppers; sauté an additional 2 minutes.
Remove from heat and stir in black beans, tomatoes and the juice of 1 lime. Stir in quinoa. Season to taste with salt and pepper. Chill
Roughly cut baby spinach into strips. Remove about 1 cup of cilantro leaves from the bunch, rinse and pat dry, and toss with the spinach. Divide spinach/cilantro mix onto salad plates and top with a scoop of quinoa salad. Top salad with your choice of cheese and diced avocado.
Makes 4 servings.
